Crispy Garlic Roasted Smashed Potatoes

14 Oz H-E-B Stemable Baby Potatoes
1/4 cup(s) Sonoma Gourmet Roasted Garlic & Herbs California Extra Virgin Olive Oil
1 Tbsp fresh rosemary, finely chopped
2 Tsp sea salt, coarsely ground
1 Tsp black pepper, freshly ground

Microwave potatoes on high 4 minutes. Allow to sit covered loosely 1 minute.
Preheat oven to 500ºF with an empty baking sheet inside.
Place potatoes on flat surface. Flatten each potato gently with bottom of a pan to thickness of about 1/2 inch, being careful to keep potato intact.
Pour oil on a plate, dunk each side of potato in oil. Remove preheated pan from oven. Place smashed potatoes carefully on hot pan. Sprinkle with rosemary, salt and pepper.
Place in oven and bake 10 minutes, using a spatula to stir up potatoes to make sure all potatoes get evenly crispy.
