Crispy BBQ Chicken Meatball Sliders

Recipe makes 4 Servings

1 1/2 Lb ground chicken
1/3 cup(s) red onion, finely diced
4 slices fully cooked bacon, finely diced
1/4 cup(s) fresh cilantro, finely chopped
1 large egg yolk
3/4 cup(s) H-E-B Bacon Bourbon Barbeque Sauce, divided use
1 cup(s) H-E-B Kettle Chips, (crushed, or the ones from the bottom of the bag!)
1/4 cup(s) grapeseed oil
1 Oz arugula leaves
12 King's Hawaiian Sweet Rolls, sliced in half for buns

In a large bowl place chicken, onion, bacon, cilantro, egg yolk, half of the BBQ sauce and half of the kettle chips. Mix together gently, but thoroughly to evenly mix the ingredients.
Heat a large skillet over medium high.
While skillet is heating roll meat into 12 meatballs.
Coat each meatball with a light layer of remaining potato chip crumbs.
Add oil to pan. Working in batches, cook meatballs on all side to a golden brown, about 4 to 5 minutes.
To assemble sliders, layer remaining BBQ sauce and arugula on bottom of cut roll and top with meatball slider and top bun.
