Criolla Salsa Salad

Recipe makes 6 Servings

2 medium hothouse cucumbers, peeled, seeded and diced small
2 medium yellow or orange bell peppers, seeded and chopped finely
1/4 cup(s) red onion, chopped very finely
1 Pt H-E-B Angel Sweet Tomatoes, halved lengthwise
1/3 cup(s) Ximena's Colombian Salsa Criolla
1 Tbsp balsamic vinegar
2 Oz Feta cheese, crumbled
2 Tbsp fresh cilantro, finely chopped

Add cucumbers, bell peppers, onions and tomatoes, to a large bowl. Drizzle with Salsa Criolla and balsamic, toss to coat.
Chill for 15 to 20 minutes. Sprinkle with Feta cheese and cilantro just before serving.
May substitute fresh mint for cilantro.
