Recipe makes 4 Servings

1/3 cup(s) mayonnaise
2 Tbsp Zatarain's Creole Mustard
1 Tsp tabasco pepper sauce
1 Lb beef cube steak
2 Tbsp unsalted butter, melted
3 Tbsp Chef Paul Prudhomme's Blackened Redfish Magic Seasoning Blends
4 Oz natural sliced Muenster
4 white Kaiser rolls, sliced in half
1 romaine lettuce, leaves torn to fit sandwich
1/4 medium red onion, sliced thin
1 large roma tomato, sliced thin

Blend together mayonnaise, mustard and hot pepper sauce to make Creole Mayonnaise. Set aside.
Heat a large, heavy skillet over medium-high heat 5 to 7 minutes, until skillet is very hot but not smoking.
Meanwhile, brush both sides of steaks with melted butter and sprinkle each side with about 3/4 teaspoon blackening seasoning.
Cook steaks in skillet 2 minutes, then turn and top each with a slice of cheese and cook 2 minutes more.
While steaks cook, heat rolls 10 seconds in microwave.
Once warm, spread mayonnaise mixture on each roll.
Layer 1 steak on each roll and top with lettuce leaves, onion rings and tomato slices.
