Creamy Poblano Pork and Sweet Potato Ragú

Recipe makes 6 Servings

1 Tbsp avocado oil
2 1/2 Lb boneless pork shoulder, cut into 1.5 inch chunks (also called meat for "carnitas")
1 cup(s) red onion, chopped
2 medium sweet potatoes, 1 inch chunks, peel still on
15 Oz H-E-B Creamy Poblano Pasta Sauce
8 Oz cream cheese
2 Oz diced green chilies
1 cup(s) chicken bone broth
1/4 cup(s) fresh cilantro, leaves only, chopped

Set pot on "sauté" setting and press button twice to get higher temperature setting.
Add oil, pork and onions to pan. Stir to coat and brown pork 10 to 12 minutes.
Add sweet potatoes, pasta sauce, cream cheese, green chilies and bone broth to pan. Stir to combine.
Seal pot and set on "Manual" setting. Set timer to 18 minutes. Pressurizing can take from 10 to 15 minutes.
When cooking time is complete, vent using quick release valve. Allow to rest 5 to 10 minutes. Finish with cilantro and serve.
Chef's Note: Ragú is a thick meaty stew/sauce that can be served alone, with tortillas or over pasta.
