1 Lb boneless skinless chicken breast
1 cup(s) celery, chopped
1/2 cup(s) red onion, fine diced
1/4 cup(s) smoked almonds, chopped
7 Oz Dip It Cilantro Gourmet Yogurt Dip
6 cup(s) Romaine lettuce, chopped
4 cup(s) mixed greens
1 Pt cherry tomatoes, halved
1 English cucumber, sliced into thin rounds

Instructions

Place chicken breast into sauce pot and cover with water, simmer chicken on medium heat until cooked through and tender. Transfer to a bowl or plate and shred with a fork.

Combine chicken with celery, onions, almonds and yogurt dip mixing well.

In a large bowl, mix together Romaine lettuce and mixed greens, divide the greens, tomatoes and cucumbers evenly among 4 bowls, top with a generous portion of chicken salad and serve.
