Recipe makes 10 Servings

1 cup(s) fresh cranberries
1/4 cup(s) Hill Country Fare Pecan Pieces
2 1/2 cup(s) H-E-B Classic Pancake Mix
1/2 cup(s) H-E-B Mootopia Milk
1 H-E-B Large Grade AA Eggs
2 Tbsp Hill Country Fare Canola Oil
3 Tbsp H-E-B Sucralose Sweetener

Combine cranberries and pecans in food processor until the mixture becomes chunky in texture (about 30 seconds).
Add pancake mix, milk, egg, oil and sugar to processed mixture. Blend for 30 more seconds.
Heat large skillet, pancake griddle or waffle maker to medium-high heat.
Spray pan with nonstick cooking spray and pour 1/2 cup batter for each pancake.
Cook pancakes for 1 minute on each side. Serve with butter and syrup.
