1 Tbsp olive oil
12 Oz ground beef
3/4 cup(s) red onions, finely chopped
15 Oz H-E-B Diced Tomatoes for Chili
1 1/2 Tsp garlic powder
1 Tbsp chili powder
8 Oz salted butter (1 stick)
1/4 cup(s) flour
2 cup(s) whole milk
8 Oz H‑E‑B Select Ingredients Sharp Cheddar Thick Cut Shreds
4 Oz Parmesan cheese
2 cup(s) H-E-B Texas Corn Chips, (about 3 ounces) crushed slightly

Instructions

Preheat oven to 350˚F.

Please a skillet over medium-high heat. Add oil, ground beef and onions. Stir and and cook thoroughly, about 7 to 9 minutes, breaking up meat as it cooks.

Add tomatoes, 1/2 cup water, and garlic and chili powders. Bring to a simmer for 6 to 8 minutes. Set aside.

While beef is cooking, bring a large pot of water to a boil. Add pasta and cook according to minimum time on package directions.

In a separate pan, melt butter over medium heat. Whisk in flour to form a smooth paste and cook 1 minute. Add milk and whisk thoroughly for 1 to 2 minutes to thicken.

Remove from heat and stir half of both cheeses into milk mixture until melted.

Drain pasta and add to a 9” X 13” oven safe pan. Combine beef and cheese mixtures then stir through pasta.

Top with remaining cheese and corn chips. Bake 15 to 18 minutes, just to melt cheese and toast corn chips.
