Recipe makes 8 Servings

4 corn
1 red onions, sliced into rings
1 cup(s) poblano pepper, roasted and diced
1/2 cup(s) roma tomato
1 Tbsp jalapeno pepper, minced
3 Tbsp lime, juiced
1/2 Tsp cayenne pepper
1/2 cup(s) Cotija cheese, crumbled
8 corn tortillas
1/2 cup(s) fresh cilantro, chopped

Preheat grill to 350°F. Shuck corn and place on grill whole. Grill corn until colored on all sides. Grill onions and peppers until onions have good grill marks and smell sweet and peppers are blistered and skin is blackened. Remove all veggies from grill and let them rest.
Cut corn off cob into a bowl and dice grilled onion, remove skin from peppers and seed and chop them. Combine all in same bowl. Add in diced tomatoes, jalapeño, lime juice and cayenne pepper. Mix well to incorporate then build your taco with corn mixture on tortilla then sprinkle taco with cheese and cilantro. Add in favorite taco garnishes and serve!
