Recipe makes 10 Servings

15 Oz palm shortening
2 cup(s) brown sugar
4 Tsp vanilla extract
6 large eggs
4 cup(s) all purpose flour
3 Tsp baking powder
3 Tsp kosher salt
2 cup(s) dark chocolate bar, broken up into small chunks
1 jar of marshmallow cream
2 cup(s) fresh strawberries, sliced thinly

Preheat oven to 350°F.
In a large bowl, add flour, baking powder and salt. Mix with a whisk to combine.
Using a stand or hand mixer, cream shortening, sugar and vanilla extract. Mix until fluffy, about 5 to 6 minutes.
While mixer is running on lowest speed, add eggs one at a time and allow each egg to get absorbed in the shortening mixture. Once all eggs are incorporated, mix an additional 2 minutes, or until creamy.
With mixer on the lowest setting, slowly add flour mixture 1/2 cup at a time. Allow each addition of flour to be properly absorbed. Once all flour is incorporated, add chocolate and mix on medium speed for 30 seconds to ensure proper mixture of batter.
Using a large 4 oz. scoop or spoon, scoop dough onto a sheet pan lined with parchment paper. Leave about 2-3 inches of space between each cookie, as they will grow and spread out.
Bake 12-14 minutes or until cookies are puffed and just starting to turn light brown on the edges.
Allow cookies to cool completely before building burgers. Spread marshmallow cream on the underside of a cookie and top with strawberries. Place another cookie on top to complete the burger. Consume immediately.
Chef's Note: These can be made a day in advance, just reserve sliced strawberries until ready to serve so they don't make the cookies soggy.
