Recipe makes 4 Servings

5 Oz Central Market Organics Baby Spinach
5 Oz H-E-B Angel Sweet Tomatoes, halved
8 Oz Central Market Microwaveable Grains, White & Red Quinoa
1/2 cup(s) Ximena’s Salsa Criolla
2 Tbsp fresh cilantro, finely chopped

Place spinach and tomatoes in a large salad bowl.
Open grains and break apart lumps slightly by pressing on the package sides.
Not necessary to cook according to package directions (unless a softer texture is preferred). Add to bowl.
Drizzle salsa criolla over grains and spinach.
Add cilantro and toss gently to coat. Serve immediately.
Chef's note: Season with salt or pepper, to taste. Great as a side salad or a complete nutritious dinner with the addition of some lean protein like grilled chicken or salmon.
