Recipe makes 62 Servings

2 Tbsp extra virgin olive oil
2 medium white onions, diced
6 fresh garlic cloves, minced
2 cans of H-E-B Pure Cane Sugar Cola
2 cup(s) apple cider vinegar
2 Tbsp tomato paste
2 Tbsp Worcestershire sauce
1/2 cup(s) honey
2 Tbsp spicy brown mustard
1 can of chipotle peppers
1/2 cup(s) roasted salted pepitas
1 Tbsp soy sauce

In a heavy bottom pot set over medium heat add olive oil, onions and garlic. Cook until onions and garlic just start to color. (6-8 min)
Add in remaining ingredients starting with the cola and cider vinegar. Bring sauce to a boil then reduce heat to a simmer. Cook for 30-35 minutes or until sauce just starts to thicken.
Using an immersion blender puree sauce in the pan until sauce is smooth. Continue to cook pureed sauce for 10 more minutes.
Remove from heat and season to taste with extra salt and pepper if needed and refrigerate for up to 2 weeks.
