18 1/4 Oz Hill Country Fare White Cake Mix
3 Hill Country Fare X-Large Grade A Eggs, whites
16 Central Market Organic Truffles
2 1/2 cup(s) powdered sugar
1/4 cup(s) H-E-B Select Ingredients 2% Milk
2 cup(s) shredded coconut

Heat oven to 350°F.
Line 2 cupcake pans with 16 foil or paper liners and set aside.
Prepare cake mix according to package directions (use egg whites).
Fill each cupcake liner with 1/3 cup mix and drop 1 truffle in center of each.
Bake for 20-30 minutes (center will be soft because of truffles). Set aside to cool. A toothpick entered into the center should come out clean, except for chocolate melted on it.
Combine sugar, and slowly add the milk about 2 tablespoons at a time until mixture is thick like icing and mix on low until sugar is moistened.
Beat on high speed until icing is smooth and fluffy.
Add extra milk (1 teaspoon) if needed to reach proper consistency for your Royal icing.
Spread 1 1/2 tablespoons icing on each cupcake.
Place coconut in small bowl and press each iced cupcake into coconut.
