Recipe makes 6 Servings

1 Tbsp olive oil
1/4 cup(s) shallot, very finely chopped
1/4 cup(s) celery, very finely diced
5 Oz baby clams, drained
10 1/2 Oz H-E-B Select Ingredients Cream of Potato Soup
1 1/2 cup(s) whole milk
1 medium bay leaf
6 Kaiser rolls

Preheat oven to 350°F.
In a soup pot over medium heat add oil, shallot and celery; sauté 6 to 8 minutes or until celery softens.
Add clams, potato soup, milk and bay leaf to pot. Stir to combine and simmer 10 to 15 minutes.
Meanwhile, crisp bread in oven 5 to 7 minutes then set aside.
Cut top out of the top of each roll and hollow out enough bread to make room for the soup. Pour soup into each bread bowl and serve.
Chef's Note: Garnish with fresh parsley, if desired. Can also substitute half and half for whole milk for an even richer soup.
