To make Cilantro Lime Rice: in a small pot, bring 1 cup of water to a boil. Stir in Cilantro Lime Rice Seasoning and Quick Cook Rice and mix thoroughly. Cover and remove from heat. Let stand 10 minutes or until water is fully absorbed.

Preparing Sweet Mini Peppers: in a small mixing bowl, toss Fresh Sweet Mini Peppers with one tablespoon of oil, enough to lightly coat. Divide Citrus Rum Glaze into 2 small bowls to use for basting chicken and peppers. Doing this helps to avoid cross contamination and keeps food safe.

Preparing Char-Grill Chicken & Mini Peppers: when grill or grill pan is hot, place Island Spiced Chicken and Fresh Sweet Mini Peppers on grill and cook, flipping often, until nicely charred and cooked through. Baste chicken and peppers frequently with Citrus Rum Glaze using a brush or spoon. Cook about 9 to 10 minutes.

Finish, Plate & Dig In! Spoon cilantro-lime rice into bowls and place char-grilled citrus chicken and peppers on bed of rice. Top with Pineapple Salsa as desired. Enjoy!
