Citrus Olive Oil Cake

Recipe makes 12 Servings

5 large eggs, separated
2 cup(s) sugar
1 1/4 cup(s) whole milk
1/2 cup(s) Central Market Lemon Infused Extra Virgin Olive Oil
1/2 lemon, juiced
1 Tsp vanilla extract
3 cup(s) all purpose flour
1 Tsp baking powder

Preheat oven to 400°F and grease a loaf pan.
In a large bowl, whisk egg whites until stiff and set aside.
In another large bowl (or stand mixer) combine sugar and egg yolks. Mix until well incorporated then add milk, oil, lemon juice and vanilla. Mix another 2 minutes or until well incorporated then slowly add flour and baking powder.
Remove mixture from mixer and using a rubber spatula, fold whipped egg whites into mixture in batches until well combined.
Pour mixture into prepared baking dish.
Bake 20 minutes then cover with foil or parchment. Reduce heat to 350°F and bake an additional 30 to 40 minutes or until top starts to slightly brown.
Cool cake a few minutes before serving with whipped cream, berries or your favorite toppings.
