1 lime, juiced
2 Tbsp H-E-B Extra Virgin Olive Oil
1 garlic clove, chopped
3 Tbsp cilantro leaves, chopped
1 cup(s) Texas orange, cut into sections
1/2 Tsp H-E-B Red Cayenne Pepper
2 Lb Large Texas Gulf shrimp, peeled and deveined
1 1/2 Tsp H-E-B Texas Originals Chicken Fajita Seasoning
5 Oz Central Market Oragnics Herb Garden Salad Mix
2 cup(s) Texas Ruby grapefruit sections

Instructions

For the vinaigrette combine, lime juice, olive oil, garlic, cilantro, orange, and cayenne pepper in a blender to a chunky texture (about 1 minute). Refrigerate until ready to use.

Heat gas or charcoal grill to 400°F.

Line baking sheet with foil and top with grilling mesh sprayed with nonstick cooking spray.

Season shrimp with fajita seasoning and place on prepared grilling mesh.

Grill for 2 1/2 minutes on each side.

Layer salad mix and grapefruit sections on a large platter, arrange grilled shrimp on top, and add vinaigrette as desired.
