Citrus Chicken Breast With Rotini

Recipe makes 6 Servings

2 Tbsp vegetable oil
2 Tsp paprika
3 Tbsp lemon, juiced
6 chicken breasts, boneless, skinless and halved
1 Lb rotini
1 Lb H-E-B® Mixed Vegetables
3/4 cup(s) orange juice
1 Tbsp cornstarch
2 Tsp kosher salt
1/2 Tsp black pepper
1/2 cup(s) H-E-B® More Fruit Apricot Spread

Mix oil, paprika, lemon juice in small bowl and coat chicken.
Heat a large non-stick skillet 1 minute over a medium-high heat.
Place chicken in skillet and cook 3 minutes covered, turning once.
Cook rotini according to package directions.
Spoon vegetables in spaces between chicken pieces.
Mix orange juice, cornstarch, salt and pepper in small bowl and pour over vegetables.
Spoon fruit spread evenly over top of chicken.
Bring to a boil, cover and simmer 7 minutes.
Drain rotini and pour onto serving platter.
Place chicken on top, then spoon sauce and vegetables over chicken.
