Cinnamon Roll Stuffed Apples with Pumpkin Latte Frosting

8 Envy apples, large
1 pkg. cinnamon rolls
1 cup(s) H-E-B Artisan Pumpkin Frosting

Preheat oven to 400ºF.
Wash and dry apples.
Cut off top and bottom of each apple so surface is flat (cut just enough from the bottom so it sits flat and won't fall over during baking).
With a spoon or melon baller, hollow out each apple leaving space for a cinnamon roll to fit snugly inside with about 1/4 inch of space at the top so it can expand during baking.
Fill the inside of each apple with a refrigerated raw cinnamon roll then place in a pyrex dish or baking sheet lined with parchment paper. Bake 10-15 minutes or until tops of cinnamon rolls are just browned.
Remove from oven, cover with foil and bake an additional 10-15 minutes to allow apples to soften and cinnamon rolls to fully cook.
Remove apples from oven and cool at least 20 minutes.
Meanwhile, prepare artisan pumpkin frosting according to package directions.
Top each apple with 2 Tbsp. of frosting.
