Cinnamon Raisin Breakfast Pudding

Recipe makes 8 Servings

1 Lb Oroweat Raisin Cinnamon Bread, unsliced
4 H-E-B Large Grade AA Eggs
1/2 cup(s) pure cane sugar
16 Oz Borden Fat Free Skim Milk
2 Tsp pure vanilla extract
1 Tsp ground cinnamon
1/4 cup(s) powdered sugar

Coat two 8 or 9 inch square baking pans with a non-stick vegetable spray.
Trim and discard ends from bread and slice into eight slices.
Arrange four slices of bread on bottom of each baking dish.
Whisk eggs, sugar, milk, vanilla and cinnamon together, mixing well.
Pour over bread, cover and refrigerate overnight.
Preheat oven to 350°F.
Drizzle margarine over bread.
Bake uncovered until browned and custard is set.
Dust with powdered sugar and serve immediately with fresh fruit or fresh squeezed orange juice.
