Cilantro Lime Chicken and Rice

Recipe makes 4 Servings

1 Tbsp olive oil
1 Lb boneless, skinless chicken thighs
1/4 Tsp kosher salt
1/4 Tsp black pepper
9 Oz H-E-B Cilantro Lime Cooking Sauce
16 Oz H‑E‑B Steamable Long Grain White Rice
1 Tbsp cilantro, chopped
1 lime, cut into wedges

Place a large sauté pan over high heat and add 1 tablespoon of oil.
Place chicken thighs in pan and season with salt and pepper. Cook about 4 minutes on each side or until well browned.
Add cooking sauce packet and simmer 10 minutes or until chicken reaches an internal temperature of 165°F.
Meanwhile, heat rice according to package instructions. Once chicken is fully cooked, transfer to a plate but leave sauce in pan.
Add chicken to pan with remaining cooking sauce and stir to coat then stir in cilantro.
Serve chicken on a bed of cilantro rice and garnish with lime wedges.
