Churro Waffles with Smoked Maple Butter Sauce

1 cup(s) H-E-B Pitmaster Bacon, diced small
2 cup(s) Parker's Maple Syrup
1 Tsp vanilla extract
2 Oz unsalted butter, half a stick
6 Kellogg's Eggo Thick & Fluffy Belgian Style Waffles
1 cup(s) cinnamon sugar, or as needed
1 cup(s) sour cream, as needed

In a sauté pan set over medium heat, add bacon and cook until crispy. Drain fat into a dish but keep bacon in pan.
To bacon, add maple syrup, vanilla and butter. Whisk together and bring to a simmer.
Continue to cook, whisking intermittently, until sauce has thickened slightly. Remove from heat and allow to cool until warm.
Cook waffles in a toaster or toaster oven according to package instructions or until waffles are crispy.
Place cinnamon sugar in a bowl then coat each waffle. If making in batches, keep sugared waffles warm in the oven on lowest or warm setting.
For serving, place a dollop of sour cream in the center of each waffle and drizzle with warm syrup as needed.
Chef's Note: These waffles are very easy to customize with any toppings of your choice. Ice cream is especially fantastic and acceptable to replace sour cream.
