Recipe makes 12 Servings

2 Lb ground chorizo
1/2 cup(s) panko bread crumbs
1/2 cup(s) Cotija cheese, grated
1/2 cup(s) fresh cilantro, chopped
2 large eggs
1 cup(s) ice cold water
2 cup(s) Central Market Roasted Tomatillo Salsa, plus more as needed
12 Pepperidge Farm Golden Potato Slider Buns, as needed

Instructions

In a bowl or stand mixer, add chorizo, panko, cheese, cilantro, eggs and water. Mix until well combined and water is completely blended in.

Roll meat mixture into golf ball sized meatballs and place on a sheet pan lined with parchment paper. Refrigerate at least 1 hour to allow meatballs to set up.

Place a large non-stick skillet over medium-high heat, add olive oil and fry meatballs in batches, turning until nicely browned on all sides. As meatballs get browned, add them to a slow cooker.

When all meatballs are in the slowcooker, add salsa and set to low heat.

Cook meatballs at least 1 hour or until fully done. Serve on slider buns and garnish with condiments of choice.

Chef's Note: These meatballs can be made ahead of time then add cooked meatballs and salsa to slowcooker and set to low to re-warm for any party occasion.
