Chopped Salad with Za'atar & Tahini Vinaigrette

Recipe makes 8 Servings

1/2 cup(s) pitted Kalamata olives, drained
5 cloves of garlic, smashed
2 Tsp Adams Reserve Za'atar Rub
2 Tbsp tahini, (sesame paste)
1/3 cup(s) lemon juice
1/4 cup(s) fresh mint leaves, loosely packed
1 cup(s) extra virgin olive oil
2 large heads of romaine lettuce, washed, dried, and chopped small
30 Oz can of garbanzo beans, drained and rinsed
1 bunch of fresh basil, chopped
1 cup(s) mozzarella cheese, chopped into bite sized pieces
1 Pt cherry tomatoes, sliced in half

In a blender, combine olives, garlic, za'atar rub, tahini, lemon juice and mint leaves. Blend until smooth.
While blender is running, slowly add olive oil in a continuous stream to form an emulsion.
Season to taste as needed. Place in a container and chill until ready to use.
In a large bowl, place romaine, garbanzo beans, basil, mozzarella cheese, and cherry tomatoes. Toss to combine.
Serve with vinaigrette as desired.
Chef's note: I add chopped salami and almonds to mine for extra texture and flavor.
