3 cup(s) H-E-B Mi Comida Queso Tipo Oaxaca Rallado, or any mild melting cheese
12 H-E-B Sabor Tradicional Ready to Cook Street Taco Tortillas, plus more as needed
1 cup(s) roasted Hatch peppers, roughly chopped
2 cup(s) H-E-B Smokehouse Split Sliced Hardwood Smoked Beef Brisket, chopped small or shredded, plus more as needed

Place a large non-stick skillet over medium-high heat.
For each quesadilla, spread a thin layer of cheese evenly over a tortilla, followed by peppers and brisket. Add another tortilla on top and press together.
Cook 3 to 5 minutes per side or until cheese is just melted and quesadilla is slightly crispy on each side.
Cut and serve with your favorite condiments.
