Recipe makes 4 Servings

12 Oz tenderloin steak, grilled and sliced thin
2 H-E-B Hearts of Romaine, chopped
2 bacon slices, cooked and chopped into small pieces
2 eggs, hard-boiled and peeled
1 cucumber, sliced
1 cup(s) cherry tomatoes, halved
1/2 cup(s) plain Greek yogurt
1/4 cup(s) blue cheese crumbles
1 Tbsp shallot, minced
1 garlic, minced

In a large bowl, mix together steak, chopped romaine, bacon, hard boiled eggs, cucumbers and cherry tomatoes.
To make the dressing, combine yogurt, blue cheese, shallot and garlic. Mix well.
Drizzle dressing over salad. Serve cold.
Chef's note: Make dressing the day before to allow the flavors to really come out.
