Chipotle Marinated Pork Cheese Steak Torta

Ingredients

Recipe makes 4 Servings

1/3 cup(s) chipotle peppers in adobo sauce
2 cloves of garlic, smashed
3 Tbsp limes, juice
1/2 cup(s) cilantro, leaves loosely packed
1 Lb thin sliced pork milanesa, cut into thin strips
1 Tbsp grapeseed oil
1 red bell pepper, thinly sliced
1 cup(s) white onion, thinly sliced onion
4 bolillo rolls, lightly toasted
4 slices of Monterey Jack cheese, plus more as needed

Instructions

Combine chipotle peppers, garlic, lime juice and cilantro into a blender and puree until smooth. Season marinade to taste.

Place pork into a plastic bag along with half of marinade, reserve other half for garnishing. Allow pork to marinate in refrigerator for at least 1 hour.

In a large non-stick skillet add oil, peppers and onions, stir-fry for 4 to 5 minutes or until onions are just translucent. Add pork and continue to sauté until pork is fully cooked. Season mixture to taste as needed.

To serve, place cheese in torta and stuff with hot pork and pepper mixture, garnish with more chipotle sauce as desired. Repeat for each torta.
