Chili Marinated Cubed Feta Salad

Recipe makes 6 Servings

8 Oz H-E-B Traditional Block Feta Cheese, cut into small cubes
1/3 cup(s) Orti Di Calabria Garlic, Tomato & Chili Stir in Sauce, plus more as needed
4 heads of Eva Mini Romaine Hearts, roughly chopped
1 cup(s) pitted kalamata olives, drained and rinsed
1/4 cup(s) roasted salted sunflower seeds, plus more for garnishing
1 English cucumber, diced
1/4 cup(s) extra virgin olive oil
1 1/2 Tbsp lemon, juiced

Place cubed feta into a plastic container with tight fitting lid. Add chili sauce and toss to coat feta evenly. Cover and allow to marinate for at least 30 minutes.
Assemble salad by placing romaine lettuce into a large bowl. Add olives, marinated feta, sunflower seeds and cucumbers.
Toss everything gently together and drizzle with olive oil and lemon juice. Toss again before serving. Season to taste as needed.
Chef's Note: You can make marinated feta up to a day in advance and enjoy on its own as an appetizer.
