Chickpea Curry with Atry Smoked Basmati Rice

Recipe makes 4 Servings

2 cup(s) Atry Smoked Basmati Rice
2 Tbsp canola oil
1 cinnamon stick
2 clove garlic, minced
1 cup(s) yellow onion, chopped
1 Tsp ginger, grated
4 cloves garlic, minced
1/4 Tsp ground cumin
1/2 Tsp ground turmeric
1/4 Tsp black pepper
1 Tsp garam masala
14 Oz chopped tomatoes
14 Oz chickpeas, rinsed & drained
1/2 Tbsp cilantro, chopped

Cook rice according to package directions. Cover and set aside.
Heat oil in large skillet over medium. Add cinnamon stick and 2 minced garlic cloves. Cook until popping sound is heard.
Add in onion, ginger and remaining minced garlic. Cook approximately 4 - 5 minutes or until onions are browned. Stirring frequently.
Add in remaining spices. Stir to combine then add in tomatoes and chickpeas.
Cook until tomatoes have reduced and thickened. Stir in cilantro and serve immediately.
