Chickpea, Barley and Lentil Pilaf

Recipe makes 2 Servings

1 Tbsp olive oil
1/4 cup(s) red onions, finely chopped
1 Tsp fresh garlic, finely minced
1/2 cup(s) vegetable broth
1 Tsp Adams Reserve Za'atar Seasoning
15 Oz Central Market Organic Garbanzo Beans, drained and rinsed
1 Central Market Microwaveable Barley and Lentils
1 Tbsp fresh parsley, finely chopped
1 small Roma tomato, seeded and chopped

Heat a medium sized skillet on medium-high.
Add olive oil and onions. Sauté until onions begin to turn soft and translucent, about 4 minutes.
Add garlic, broth, za'atar seasoning and chickpeas. Simmer 2 minutes to infuse flavors into broth.
Press gently on package of barley and lentils before opening to break into smaller pieces. Add to skillet. Stir and simmer 2 to 3 minutes or until grains absorb broth and soften.
Remove from heat. Stir through parsley and tomatoes. Serve immediately.
