Chicken Wings in Agrodolce

1/2 cup(s) corn starch
1 Tsp kosher salt
1/2 Tsp cayenne pepper
1 Tsp black pepper
10 Hill Country Fare Chicken Wings
1 cup(s) pineapple juice
1/3 cup(s) apple cider vinegar
1/3 cup(s) Vela Farms Orange Chili Marmalade
1/3 cup(s) sugar
1 Tbsp La Choy Soy Sauce
1 1/2 Tbsp corn starch

Preheat oven to 425˚F. Place 1/2 cup of cornstarch, kosher salt, cayenne pepper and black pepper together in a bowl and mix to combine.
Dredge each of the wings in seasoned corn starch mixture and arrange them on a sheet pan lined with parchment paper.
Bake for 30 minutes. Turn over and bake an additional 10-15 minutes until they are fully cooked and crispy. While wings are baking, turn your attention to making the agrodolce sauce.
In a small saucepan, combine pineapple juice, cider vinegar, chili marmalade, sugar, soy sauce and 1/2 cup of water. Bring to a simmer. In a separate bowl, combine remaining cornstarch with 2 tablespoons of water to make a slurry (semi-liquid). Add to sauce and stir vigorously until sauce thickens. Remove from heat.
Remove wings from oven and place in a bowl. Drizzle agrodolce sauce to coat the wings and toss to combine. Season with salt and pepper to taste, if needed. Serve hot.
