1 H-E-B Meal Simple Chicken Tortilla Casserole Kit
1 Tbsp olive oil
1 cup(s) white rice
2 1/2 cup(s) water
1/2 cup(s) grated cheddar cheese
1/2 cup(s) sour cream

Preheat oven to 375°F and grease a 9X13-inch baking dish; set aside.
Place a 6-quart soup pot over medium heat for 2 minutes. Add olive oil and rice. Stir-fry for 3 minutes then add onions, garlic, peppers, corn and chopped serrano pepper to taste.
Stir-fry vegetable/rice mixture an additional 5 minutes or until onions are tender. Add tomatoes and stir-fry 2 minutes then reduce heat to low.
Add spice packet, water, chicken, cheddar cheese and sour cream; mix well.
Remove pot from heat and pour mixture into prepared baking dish; cover with foil and bake 30 minutes.
Uncover and sprinkle packet of Monterey Jack cheese and tortilla strips on top. Return to oven and bake an additional 10 minutes. Garnish with cilantro before serving, if desired.
