Recipe makes 4 Servings

1 1/4 Lb boneless skinless chicken thighs, cut into small pieces
2 garlic cloves, smashed
1 Tbsp Gourmet Garden Ginger Stir-In Paste
1/2 cup(s) fresh cilantro, roughly chopped
1/2 cup(s) kimchi, roughly chopped
1/2 cup(s) panko bread crumbs
1 Tsp kosher salt, plus more as needed
1 Tsp cracked black pepper, plus more as needed
2 Tbsp canola or vegetable oil, plus more as needed for searing

In a food processor, combine chicken thighs, garlic, ginger paste, cilantro, kimchi, panko and salt and pepper. Pulse until smooth and well blended.
Form into approximately four, 4 oz. patties and place on a plate. Cover and refrigerate at least 20 minutes to allow patties to set up.
Place a cast iron skillet over medium heat and allow to get hot, approximately 5 to 6 minutes. Add oil and sear burgers 4 to 6 minutes per side or until nicely crusted.
Turn heat down to medium-low and continue to cook until patties reach an internal temperature of at least 170ºF. Allow to rest 5 minutes before assembling burgers.
Chef's Note: Chicken mixture might be a little sticky when forming the patties. Chilling them before cooking helps to firm them up. I like to serve this burger on a lettuce bun with cilantro and chili paste.
