1 Lb package H-E-B Jalapeño and Cream Cheese Poppers, 8 poppers
2 chicken breasts
2 Tsp olive oil
1 Tsp Central Market Hot Thai Curry Seasoning
1/3 cup(s) red onion, very, very thinly slices
1/4 cup(s) Hot Damn This is My Yam BBQ Sauce
8 white or yellow corn tortillas
1/4 cup(s) fresh cilantro, leaves
1/3 cup(s) red cabbage, sliced very, very thin
12 Oz H-E-B Pico de Gallo

Instructions

Preheat oven to 425ºF. Line a baking sheet with foil. Lay jalapeño poppers on one end of the pan, close together, but not touching. Place in oven and cook for 15 minutes.

Meanwhile, pat chicken dry with a paper towel. Drizzle with oil and season with Thai curry seasoning.

Place chicken on another smaller piece of foil large enough to hold chicken. Curl edges of foil up slightly to form an rim around chicken. Sprinkle onion on top of chicken and drizzle with half of sauce.

Remove poppers from oven and place chicken foil packet on other side of baking sheet. Return to oven for 12 to 15 minutes, or until chicken is cooked through.

While chicken is cooking, toast tortillas lightly on both sides in a hot dry skillet.

Remove chicken from oven. Cut into thin slices.

Load cilantro, cabbage, a few slices of chicken, 1 jalapeño popper, 1 heaping tablespoon pico de gallo and a drizzle of sauce into each tortilla.

Chef's Note: This is a great recipe for appetizer portions when you have to feed a crowd. Very satisfying and easy.
