2 cup(s) Chef Prepared Chicken Breast Quarter Original
1/4 cup(s) pine nuts
1/2 romaine lettuce, rinsed and chopped into bite-sized pieces
1 hot house cucumbers, peeled and sliced into 1/4-inch pieces
4 roma tomato, chopped
25 Oz baby spring mix
6 Oz crumbled feta cheese
1/4 cup(s) La Martinique Classic French Vinaigrette Dressing

Using a cutting board, debone chicken and cut meat into bite-sized pieces. Set aside.
Heat non-stick skillet over medium heat.
Toast pine nuts for 3 to 4 minutes then remove from heat and allow to cool.
In a large bowl, layer romaine lettuce, cucumber slices, chopped tomatoes, spring mix, chicken, pine nuts and crumbled feta. Toss to combine.
Before serving, pour dressing over salad and mix.
