Recipe makes 8 Servings

1 small white onion, diced
1 small jalapeno pepper, diced and seeds removed
1 Tbsp unsalted butter
29 Oz H-E-B Diced Tomatoes with Green Chilies
1/2 cup(s) Central Market Organics Low Sodium Chicken Broth
1/2 cup(s) Hill Country Fare Vegetable Oil
10 H-E-B Yellow Corn Tortillas, cut into quarters
2 cup(s) H-E-B Rotisserie Chicken, shredded
2 cup(s) H-E-B Shredded Mexican Blend 4 Cheese

In a large skillet, sauté onion and pepper in 1 tablespoon of butter until lightly browned.
Add tomatoes and chicken broth, then reduce heat to a simmer.
Heat vegetable oil in skillet over medium heat for 2 minutes.
Fry the tortilla quarters in batches until golden brown; drain on paper towels.
In a large casserole dish, layer tortillas on the bottom and sprinkle chicken on top.
Pour tomatoes over chicken, sprinkle with cheese and serve.
If desired, serve with eggs and refried beans.
