Chicken Black Bean Soup with Avocado

Recipe makes 8 Servings

2 Tbsp Hill Country Fare Canola Oil
1 1/2 Lb boneless skinless chicken thighs, chopped
1 white onion, chopped
1 Tbsp ground cumin
1 Tbsp garlic, chopped
2 15 oz cans black beans, rinsed & drained
1 Qt reduced sodium chicken Broth
1/8 Tsp salt
1/8 Tsp pepper
1 Large Hass avocado, sliced

Preheat a medium soup pot to high.
Add canola oil, chicken, onion, cumin and garlic; sauté 10 minutes, stirring often.
Add black beans and chicken broth.
Bring to a boil, reduce to medium-low and cook 1 hour; season with salt and pepper.
Serve in large soup bowls and garnish with avocado.
