Chicken and Feta Patties with Mediterranean Salad

Recipe makes 5 Servings

1 1/2 Lb ground chicken
1 cup(s) fresh spinach, chopped
1/3 cup(s) reduced fat feta
1/2 Tsp black pepper
5 cup(s) mixed greens
1/3 cup(s) Kalamata olives, pitted
1 1/2 cup(s) cucumber, sliced
4 pepperoncini
3/4 cup(s) red onions, sliced
2 roma tomato, chopped
2 Tbsp olive oil
2 lemon, juiced

Preheat the grill to medium-high.
To make the patties, combine chicken, spinach, feta and black pepper in a large bowl. Mix thoroughly and form into 5 balls.
Press the balls to form patties and place on the heated grill.
Cook 6 to 8 minutes per side or until an internal thermometer reaches 165ºF.
To make the salad, combine mixed greens, olives, cucumber, pepperocinis, red onion, tomatoes, olive oil and lemon juice one large bowl. Toss to combine.
Divide the salad into 5 separate bowls and serve one patty on top.
