Chicken and Cauliflower Rice

Recipe makes 4 Servings

1 Lb boneless skinless chicken breast
1 Tbsp olive oil
1 Tsp cumin
1 Tsp garlic powder
1/2 Tsp black pepper
1/2 cup(s) onion, diced
1 Tbsp tomato paste
1 cup(s) low sodium chicken broth
1/4 cup(s) chopped cilantro
12 Oz package H-E-B Cauliflower Rice

Heat the oil in a large non-stick skillet over medium-high heat.
Toss chicken breast with cumin, garlic powder and pepper and place in pan, sear several minutes per side. Remove from pan and set aside.
Add in onions and cook an additional 2 minutes, then add in tomato paste, chicken broth, and cilantro. Bring to a simmer then return chicken to pan.
Reduce heat to medium. Cover and cook 15 minutes until chicken is cooked through.
Remove chicken to a plate, return heat to medium-high and add cauliflower rice to skillet. Cook 2 minutes until heated through.
Slice chicken breast and serve with a generous serving of cauliflower rice.
