Recipe makes 4 Servings

1 Lb boneless skinless chicken breast
2 Tbsp olive oil, divided
1 Tsp lemon, zested
1 Tsp fresh thyme, chopped
1/4 Tsp black pepper
1 shallot, minced
1 garlic, minced
1 cup(s) dry red wine
2 Tbsp H-E-B Organics Morello Cherry Preserves
1/2 cup(s) frozen cherries
1 Tbsp lemon, juiced
1 Tbsp butter

Pound chicken to an even thickness. Drizzle both sides with olive oil, lemon zest, chopped thyme, and black pepper.
Heat a large skillet over medium-high flame. Add seasoned chicken to the pan. Sear for 3-4 minutes per side. Remove from pan, cover with foil, and set aside.
In the same pan add remaining olive oil and shallots. Cook shallots for 2-3 minutes until tender and lightly browned. Add in garlic, wine, and cherry preserves. Allow the sauce to come to a simmer and reduce by half.
Add in frozen cherries and cook for 3-4 more minutes.
Remove from heat and add remaining butter and lemon juice. Stir, then spoon over chicken.
