Cheesy Scalloped Potatoes

1 Hill Country Fare Cooking Spray
4 baking potato
1/4 Tsp H-E-B Iodized Salt
1/4 Tsp H-E-B Black Pepper
2 Tbsp Hill Country Fare All Purpose Flour
1 cup(s) H-E-B shredded Colby Jack cheese
2/3 cup(s) H-E-B Grated Parmesan Cheese
4 Tbsp unsalted butter
1 1/2 cup(s) H-E-B Half and Half Cream

Heat oven to 350°F.
Coat a 9 x 13-inch baking dish with nonstick spray.
Peel potatoes, then slice very thin into 1/8-inch thick slices; use the slicing disk of a food processor or a sharp knife.
Layer half the potato slices in baking dish.
Sprinkle salt, pepper and 1 tablespoon of flour over potatoes.
Layer potatoes with 1/2 cup of Colby jack and 1/3 cup Parmesan cheese.
Dot with half the butter.
Repeat steps 4-7 to make a second layer.
Pour half and half cream evenly over casserole.
Bake for 1 hour or until bubbly and a crust has formed.
Let stand 5-10 minutes before serving.
Cut into squares and serve while hot.
