Ingredients

Recipe makes 5 Servings

5 bolillos
1 Tbsp canola oil
1 medium russet potato, peeled and small diced
1 1/2 Lb coarse ground chuck for chili
1 Tbsp taco seasoning
8 Oz H-E-B Easy Melt The Party Cheese!, cubed
1/4 cup(s) pickled jalapeño

Instructions

Preheat oven to 375˚F, then cut off top 1/4 end of each bolillo and hollow out center to allow room for stuffing. Set aside.

Heat oil in a large skillet on medium-high. Add potatoes and cook several minutes tossing frequently until lightly browned. Then add ground beef and taco seasoning. Continue to cook until beef is well browned.

Remove from heat, then add cubed cheese and jalapeños. Mix to combine.

Spoon filling into hollowed out rolls. Place in a muffin tin open end up.

Bake for 30 minutes or until cheese is melted and bubbly. Serve Hot!
