Recipe makes 8 Servings

1 1/2 Lb boneless skinless chicken breast, cut into 1-inch cubes
2 Tbsp olive oil
1 Tsp Bolner's Fiesta Brand Salt Free Fajita Seasoning
2 Tbsp butter
3 Tbsp flour
1 1/2 cup(s) milk
11 Oz H-E-B That Green Sauce
8 Oz H‑E‑B Select Ingredients Colby Jack Thick Cut Shreds, divided use
2 1/2 cup(s) H-E-B Brown Rice, cooked according to package directions
10 Oz H-E-B Broccoli Florets, steamed in microwave 3 minutes

Preheat oven to 375ºF and lightly grease a 9 x 13-inch glass baking dish.
Combine chicken with olive oil and seasoning. Place a large non-stick skillet over medium-high heat. Add chicken and cook until well browned and cooked through. Remove from heat and set aside.
Meanwhile place a saucepan over medium heat. Add butter and let melt, then stir in flour and cook until it resembles wet sand. Slowly whisk in milk. Allow to thicken stirring frequently.
Once milk begins to thicken add in green sauce and 1/2 of cheese. Stir well to incorporate and then remove from heat.
Layer in rice, broccoli and chicken in casserole dish and top with cheese sauce. Mix carefully with spoon and top with remaining cheese.
Bake 15 to 20 minutes or until cheese is melted and sauce is bubbly. Let cool 10 minutes before serving.
