Cheddar Broccoli Puffs

Recipe makes 7 Servings

12 Oz frozen broccoli florets
1 large egg, beaten
1/4 cup(s) white onion, finely diced
1/4 cup(s) low fat cheddar cheese, shredded
1 Tsp garlic powder
1/3 cup(s) panko bread crumbs
1/3 cup(s) whole wheat bread crumbs
1 Tbsp parsley, minced
1/4 Tsp kosher salt

Preheat oven to 400°F. Place two lightly greased sheet pans in the oven to preheat as well.
Place frozen broccoli in a microwave safe bowl and heat until completely thawed. Transfer broccoli to a cutting board and give it a rough chop.
Combine chopped broccoli with remaining ingredients in a large bowl and mix well.
Remove preheated pans from oven. Using a spoon, drop a tablespoon of broccoli mixture onto baking sheet. Fill baking sheets and return to oven.
Bake for 20 minutes or until tops are lightly browned.
Allow puffs to cool slightly before serving.
