Cheddar and Chive Scones with Bacon

Recipe makes 8 Servings

2 1/2 cup(s) all purpose baking mix
1/2 Tsp kosher salt
1 Tsp baking powder
4 Oz unsalted butter, cut into pea sized pieces and kept very cold
1 cup(s) sharp cheddar cheese, shredded or grated
2 Tbsp Gourmet Garden Lightly Dried Chives, or feel free to use fresh chives
1 1/2 cup(s) heavy whipping cream, plus more as needed for brushing tops
6 slices H-E-B Fully Cooked Bacon, chopped

Preheat oven to 400ºF.
Using a stand mixer with paddle attachment add baking mix, salt, baking powder and butter pieces. Mix on low to incorporate.
Add cheese, chives and heavy cream, mix on medium speed until dough just holds together.
Turn out dough onto a lightly floured surface, roll out dough to approximately 3/4-inch to 1-inch thickness. Cut out scones in a triangle shape or any shape desired.
Place scones onto a sheet pan lined with parchment paper, brush tops with more cream and sprinkle bacon evenly over each top.
Bake 15 to 25 minutes or until just browned and set. Allow to cool before serving.
