Charred Green Beans with Creamy Turmeric and Almond Dressing

Recipe makes 8 Servings

1/2 cup(s) raw almonds - bulk
2 Tbsp tahini paste
2 garlic cloves, smashed
1/4 cup(s) lemon, juiced
1 cup(s) water
2 Tsp organic ground turmeric
1 Tsp honey
1 Tsp fresh ginger, peeled and grated
24 Oz green beans or haricot verts, rinsed and patted dry
2 Tbsp extra virgin olive oil
1 Tsp kosher salt
1 Tsp black pepper
1/2 Tsp ground coriander

Preheat oven to 400°F.
While oven preheats make dressing by adding almonds, tahini, garlic, lemon juice, water, turmeric, honey and ginger to a blender.
Puree ingredients on high until dressing gets thick; it can take 2-4 minutes to thicken properly. Season dressing as needed with salt and pepper and set aside.
Place green beans in a bowl and toss them together with olive oil, salt and pepper and coriander. Place on a sheet pan and roast for 25-30 minutes or until beans are slightly charred and browned on the ends.
Allow beans to cool. Place them in a serving dish and drizzle with almond dressing.
