10 Oz H-E-B Caulibuts
1 cup(s) almond flour
1 Tsp garlic powder
2 large egg, beaten
1/2 cup(s) Parmesan cheese, grated

Instructions

Place cauliflower in saucepan with water and bring to a boil. Cook 3 to 4 minutes then strain and place in a food processor and pulse until cauliflower is finer than rice. Remove from food processor and empty into a clean dish towel. Squeeze out as much excess water as possible, then transfer to a bowl.

Combine cauliflower with almond flour, garlic powder, eggs, and Parmesan cheese. Mix well to combine.

Scoop 1/3 cup portions onto a lined baking sheet and press until they are 1/4-inch thick. Place in 375ºF oven and bake 7 to 10 minutes. Remove from oven and allow to cool slightly before serving.

Chef's Note: Tortillas can be made ahead of time and wrapped individually in a damp paper towel and plastic wrap and frozen. To reheat, remove plastic wrap and microwave 45 seconds.
