Cauliflower Rice with Toasty Breadcrumbs

3 Tbsp olive oil, divided use
2 Tbsp shallot, finely chopped
1/2 cup(s) panko bread crumbs
1 Tsp Central Market Organics Herb de Provence
14 Oz H-E-B Caulibits
1 Tsp kosher salt
1 Tbsp Parmesan cheese

Instructions

Heat a large sauté pan to medium.

Add half the oil and shallots. Sauté 2 to 3 minutes or until shallots are softened and translucent.

Stir in breadcrumbs and herb de Provence. Toast, tossing frequently, until breadcrumbs are golden brown, about 4 to 5 minutes. Transfer to a bowl and set aside.

Wipe out pan carefully with paper towels to remove excess bread crumbs. Turn heat to high.

Add remaining oil and stir in Cauli-Bits to coat. Sauté briskly 2 to 3 minutes or until tender-firm.

Toss with breadcrumbs, salt and Parmesan cheese.

Serve immediately.
