Cauliflower Couscous with Pine Nuts

Recipe makes 2 Servings

1/3 cup(s) pine nuts
7 .0500 Oz Cauli Rice, Original
1 Tbsp Gourmet Garden Chives Lightly Dried
1 Tsp salted butter

Heat an empty skillet over medium heat.
Add pine nuts and toast in dry pan until lightly brown and fragrant.
Remove nuts from pan and carefully wipe pan out with a paper towel and tongs.
Turn heat up to medium high. Add cauliflower rice and toast in dry hot pan pan 2 to 3 minutes, or just until toasted and steaming. Remove from heat.
Toss cauliflower rice with chives, pine nuts and butter. Stir gently and serve immediately.
