Catfish with Cheese Grits & Green Beans

Recipe makes 4 Servings

2 cup(s) Hill Country Fare Grits
1/2 cup(s) H-E-B Shredded Cheddar Cheese
4 catfish fillets
1 cup(s) H-E-B Buttermilk
3 H-E-B Whole Wheat Bread slices, processed into medium fine crumb
1 Tbsp seasoning blend
3/4 cup(s) H-E-B Pecan Pieces
2 Tbsp shortening

Cheese grits: Bring water to boil, add grits and reduce to low.
Simmer for 2-3 minutes. Stir in seasoning and cheese. Remove from heat.
Fish: Place fish fillets in a large bowl and cover with buttermilk. Set aside.
Combine breadcrumbs, seasoning and pecan pieces in a shallow pan. Set aside.
Melt 2 tablespoons of shortening in a large skillet over medium-high heat.
Bread fish in crumb mixture and sauté 2-4 minutes per side until golden brown.
Green beans: Follow microwave instructions on cooking green beans.
For additional flavor, pan sauté cooked beans in a small amount of olive oil with crumbed bacon and diced onions (if desired).
